Regarding "org.chameleon.Boot.plist from LION hd(1,2)": If I remember correctly, this would occur if boot1h is installed in the boot sector of the Lion partition. If you want to boot without Chameleon reading any org.chameleon.boot.plist file, you need to remove the boot1h code from any partition other than the Mountain Lion partition or rename the Extra folder on the other partitions. Regarding the reading of the "/System/Library/CoreServices/SystemVersion.plist" files: These files indicate to Chameleon, which version of OS X the partition contains and allows displaying the corresponding icons for Snow Leopard, Lion, and Mountain Lion.

org.chameleon.Boot.plist is loaded first from teh partition that the boot file is found one, then it may be laoded from the drive you are booting from. SystemVersion.plist is loaded from all partition to determine the system version.
